ORGANIZATION and TIME MANAGEMENT. You could make the most amazing food but without these two your party will be really hard work and not enjoyable. Think about planning things for your party a week in advance, not the night before. Write down the days of the week. Break down the jobs to be done into a couple each day. Freezing prepared food is a good idea. The night before the party should be tying up the final loose ends and relaxing.

Being a chef for over 20 years, I have picked up a few handy tricks along the way.
One of my favourites is. The best way to get the juice from a lime. Cut the lime in half and put it in the microwave for 2 minutes on full power. Let it cool for 1 minute (you can put more than one lime in at a time). You will be able to squeeze every last drop of juice from the lime with ease. I am always on the lookout for new ideas when it comes to food. Having my own catering company I need to find the WOW! factor to keep people interested. Nowadays it is as much about the presentation as well as the food. I saw this picture on the front of a magazine and thought I would give it a go. A homemade yum yum with a chilli chocolate dip. Mmmmmm..
