Being a chef for over 20 years, I have picked up a few handy tricks along the way.
One of my favourites is. The best way to get the juice from a lime. Cut the lime in half and put it in the microwave for 2 minutes on full power. Let it cool for 1 minute (you can put more than one lime in at a time). You will be able to squeeze every last drop of juice from the lime with ease.

I am always on the lookout for new ideas when it comes to food. Having my own catering company I need to find the WOW! factor to keep people interested. Nowadays it is as much about the presentation as well as the food. I saw this picture on the front of a magazine and thought I would give it a go. A homemade yum yum with a chilli chocolate dip. Mmmmmm..
There is lots of fun to be had with presentation. The wackier the better. |
